Professional Development for Bakers

Reaching in the ovenWe’re offering an opportunity to bakers of all skill levels to “shadow” our production routine for a day. Limited to one participant at a time, individuals will be able to get behind the counter, put on an apron and be part of a fast-paced enterprise.

Natural leavens, local & regional flours, mixing, shaping and of course, baking: all this and more will be covered. How do you manage a wood-fired oven? Why retard the dough? Wholesale or retail? Any number of questions can be discussed, debated, and provisionally answered by people who’ve been doing it successfully –and acclaimed- for years.

This “stage” is geared for professional bakers, those exploring opening their own business, and even ambitious amateurs. We will not, however, be sharing recipes or gearing this specifically for home baking.
